This sheet pairs with item 01 of our Restaurant Kitchen Maintenance Protocol (log cold storage temperatures, every shift). It's deliberately one-equipment-per-sheet so the operator can post each log near the unit it covers.
Print one copy for each fridge, freezer, walk-in, and display chiller in the kitchen. At the top of each sheet, write the equipment name (e.g. "Walk-in chiller — back-of-house" or "Display chiller — front pass") and tick the target temperature. Each row is one date with both a morning and evening reading.
If a temperature is above target for two consecutive readings, the operator should write the action taken in the last column and escalate to the kitchen manager. If the unit can't be brought back into range, our service contact is at the bottom.
| Date | AM Time | AM Temp °C | PM Time | PM Temp °C | Initial | Action if abnormal |
|---|---|---|---|---|---|---|
Targets: chiller ≤ 5°C · freezer ≤ -18°C. If above target for two consecutive readings, note the action in the last column (e.g. "moved stock to walk-in", "called for service") and escalate to the kitchen manager.
